The first images are literally Cajun chicken and dumplings, just with the stew sealed inside the flat rolled dumpling dough (to make what Southerners call “slicks” for “chicken and pastry”—the term for the dish). In the South, we make leavened, fluffy dumplings as well as flat dumplings that resemble noodles, which we simmer in the stew.
This is NOT trying to be an Asian, Italian or Polish dumpling. It is quite literally exactly American chicken and dumplings, just in a different form.
I have a whole slew of Southern stews I will be dumplifying, including my tomato dumplings. Southerners are the kings and queens of hand pies—so if we can stuff it in a pie crust or a biscuit, it can also be stuffed in a dumpling.
